"Rheology is an integral part of life, from decorative paint and movement of volcanic lava to the flow of blood in our veins. This book describes, without the use of complex mathematics, how atoms and molecules interact to control the handling properties of materials ranging from simple ionic crystals through polymers to colloidal dispersions. The birth of what we call today colloidal science is the result of an interdisciplinary effort where physics, chemistry, engineering, biology, mathematics, and computation participate actively. Colloidal dispersions are systems composed of particles characterized by having at least one dimension ranging from 1–10 nm to about 1–10 μm. The book covers the physical side of colloid science from the individual forces acting between submicron particles suspended in a liquid through the resulting equilibrium and dynamic properties.

Nanoemulsions (NEs) are colloidal dispersions of two immiscible liquids, oil and water, in which one is dispersed in the other with the aid of a surfactant/co-surfactant mixture, either forming oil-in-water (o/w) or water-in-oil (w/o) nanodroplets systems, with droplets 20– nm in size.
